The core of his cuisine revolves around the dietary habits of the "Asian stomach," including the reliance on hot food, soups, rice, and noodles. Notably, while maintaining solid classic French techniques, he breaks away from traditional Western cooking concepts, using small amounts of butter, cheese, and whipped cream in his dishes, and constructing flavor combinations based on Chinese culinary principles, thus overturning preconceived notions about ingredients.
